Oyster, Elm or Garden Oyster(Temperate) - Hypsizigus ulmarius A pure white “oysteresque” species, this strain is consistently our largest fruiter (8-12” caps!). Elm Oyster mushrooms have a distinct anise flavor that pairs well with seafood. Try cooking it with a little lemon and oil, or sauteing with caramelized onions as a main dish. Fruits well outdoors on oak, sweetgum, poplar, and other hardwood species in the spring and fall, or during periods of cool weather. Indoors we recommend fruiting this strain on pasteurized wheat straw and cotton hulls for commercial production. This is a “brown-rot” fungus and can be used for intercropping into hydroponic mediums and wheat bale hybrid systems taught at our workshops, or mixed into straw or mulch into the garden to create soil and attract worms. A great mushroom for permaculture projects! Approximately 100 plugs by weight.
