Taste Of The Forest with Chef Sarah-Beth Hopton Long

Mushroom Mountain, 200 Finley Rd, Easley, SC 29642, USAJoin us for an extraordinary, interactive evening where nature’s bounty meets culinary artistry. Sarah Long is a writer, farmer, and chef dedicated to fostering community through the cultivation and preparation of sustainably grown, contemporary Appalachian cuisine. Her culinary journey began in her grandmother's kitchen, where she learned to create classic Southern dishes, which was further enriched by diverse global flavors during her time and studies abroad in England, Africa, Europe and Vietnam. In addition to her full-time job as a professor of writing at Appalachian State University, she was also the chef-farmer-owner of Heartwood Farms, the largest rabbitry in Western North Carolina, where she supplied many of the fine dining restaurants between Boone, Blowing Rock and Asheville with sustainably raised meat rabbits. Though the pandemic shuttered the enterprise in 2020, in 2024, she reopened The Spade & Spoon, a culinary market garden and supper club. She now lives on 13 glorious acres in Eastern Tennessee alongside a nutty menagerie of mutts, chickens, mini donkeys and her two-legged main man and sous chef for life, Brett.

- Grilled Stuffed Mushrooms – Smoky grilled portobello caps cradle a savory filling of wilted spinach, toasted walnuts, and golden halloumi, finished with crisp breadcrumbs and served over a vibrant salad with a bright, tangy dressing.
- Creamy Porcini and Parsnip Soup – Earthy porcini and a medley of wild mushrooms blend into a luxuriously smooth soup, enriched with velvety cream, roasted parsnips, and a whisper of thyme, crowned with crispy croutons and seared mushrooms.
- Mushroom Tartine on Sourdough – A rustic, toasted sourdough slice piled high with a medley of sautéed wild mushrooms, kissed with lemon and parsley, draped in a luscious porcini aioli, and finished with delicate shavings of aged Parmesan.
- Grilled Bananas Foster Mushroom Bread with Mascarpone – A decadent, spiced banana and mushroom bread, rich with dark chocolate and nuts, grilled to caramelized perfection and served warm with a dollop of silky mascarpone.
